Simply from Scratch: Homemade Tomato Sauce

I'm tackling semi-homemade tomato sauce tonight which has been on my to-do-list for a while.  I get tired of the store bought sauces.  Many lack flavor and just don't have the same quality as a really good Italian restaurant sauce.  You can tell the difference immediately.

I started with a very basic semi-homemade tomato sauce recipe.  I say "semi" because I did not roast my own tomatoes...yet.  (it's coming!)  As expected freshness is key for full flavor with herbs.  Use fresh whenever possible.   

1/4 c. olive oil
4 cloves garlic, minced
1/2 c. yellow onion, chopped
2 cans, crushed organic tomatoes
2 T. fresh basil, chopped
1 tsp. fresh oregano
1/2 tsp. fresh thyme
1/2 tsp fresh ground pepper
2 T. red wine vinegar



In a sauce pan over medium heat, warm the olive oil.  Add the onion and saute until golden brown.  Add the garlic and cook for about 1-2 minutes.  Be cautious; garlic can easily burn and needs to be monitored closely.  Add the tomatoes, herbs and spices.  Simmer for an hour.  If you prefer a smoother sauce, use a hand blender for a minute.  I also added cooked sweet Italian sausage and homemade meatballs.  Serves 6-8.

The Verdict?  A++
What a difference the sauce makes!!  I will be making this again.  It was easy, much cheaper than the jarred sauces and far more flavorful.  I could also tailor the sauce to what my family likes.  I'm looking forward to trying this with fresh home grown organic roasted tomatoes instead of the canned organic tomatoes.  Yum!
