Simply from Scratch: Peppermint Hot Chocolate

Winter is definitely my least favorite time of year.  Thankfully, getting ready for Christmas and enjoying treats like this one make it bearable!  There is nothing like a fresh, crisp cup of peppermint hot chocolate, a good book and my flannel pajamas to turn a cold night into a cozy one.  This will be one of my winter staples!

1/3 c. Ghiradelli unsweetened cocoa powder
1/2 c. Ghiradelli Milk Chocolate Chips
4 c. milk (I used 1%)
1 c. whipping cream
1 tsp. sugar
Pinch of Sea Salt
3 Candy Canes, crushed
4 Candy Canes for garnish
Pinch of Red Sugar Sprinkles for garnish



As you can see, I don't mess around when it comes to chocolate!  Begin by pouring milk into a saucepan over medium heat.  Whisk in the cocoa powder until dissolved.  Next add the chocolate chips and crushed candy canes.  Simmer over medium heat for about 10 minutes or until chocolate and peppermint have melted, stirring occasionally.

While chocolate is melting, add the whipping cream to a small metal bowl.  Using a hand mixer, beat the cream until soft peaks form.  Add the sugar and continue beating for another 30 seconds.  

Bring the chocolate mixture to a gentle boil and immediately remove from heat. Add salt and stir.  Ladle hot chocolate into mugs.  Top with a dollop of fresh whipped cream and sprinkle with red sugar. Serve each with a peppermint stick.
